Sugarcane honey is a dark honey produced at the Nuestra Señora del Carmen mill in Frigiliana, Málaga. This factory, over three centuries old, is the last in Europe still in full production.
This variety of honey is made from sugarcane grown on the Costa Tropical. Its production is exported to other countries that have come to appreciate the many qualities of this honey.
It can be found in traditional shops and large retailers, as it is a popular product among Malagueños, both for home consumption and in bars and restaurants in various dishes. It is an ingredient that can be used in both savory and sweet preparations, and it plays a prominent role in traditional Málaga pastry. It is also the main garnish for a dish inherited from the Arab culinary heritage: fried eggplants with sugarcane honey.
