GREEN GOLD

Avocado is considered one of the healthiest foods in the world, and the province of Málaga is the leading producer in Europe, with the Axarquía region being the main exponent thanks to its ideal climate conditions. Its flesh is light yellow-green, with a very mild and pleasant flavor and a creamy texture, making it perfect for combining as an ingredient in hundreds of culinary preparations.

One of the most valued attributes of avocado is its nutritional properties, which have made it a highly complete, balanced food with significant dietary value due to its high content of healthy plant-based fats. Although around 30 varieties of avocado are currently grown, the most cultivated and consumed in Málaga are Hass, Fuerte, Pikerton, Bacon, Reed, and Cocktail.

Its high oxidation rate requires some tricks to keep it in optimal condition once opened, such as storing the flesh with the seed or adding a few drops of lemon.

HOW TO PREPARE IT

Avocado has gained a strong following in the last ten years and has become a highly valued product in the kitchen, especially in the “healthy” food trend. It is a fruit that works well in both sweet and savory dishes, and the creaminess of its flesh makes it perfect for making dips or spreads. Additionally, it is an essential ingredient in salads and smoothies, and it has also found its place in the world of honey and even cooking oils, although this use is not as widespread in our Mediterranean-based diet.
